Want a quick and easy side dish that is low in carbs and nutrient dense? Cauliflower is a great substitute to many carbs, but I particularly like them mashed!
INGREDIENTS:
1 medium-sized head of cauliflower
4 tbsp butter, ghee, or coconut oil
Herbs & Spices:
1/4 cup rosemary
Sea salt, pepper and garlic salt to taste
INSTRUCTIONS:
Chop the cauliflower into roughly 2-3 inch pieces.
Steam the cauliflower until it is fork tender, then place it into a food processor. Add the butter/ghee/coconut oil, herbs and spices to taste.
Puree until smooth and creamy.
